3 oz dark chocolate
1/2 cup pitted dates, about 5 dates (soaked in warm water for 10 minutes and rinsed)
1 cup almond pulp (leftover almond meat after making almond milk)
1/4 teaspoon baking soda
1/2 cup semi sweet chocolate chips
1-Preheat oven to 375°F.
2-Melt 3oz dark chocolate in a double boiler.
3-Place the melted chocolate and dates in your Vitamix or in your food processor. Process for 5 minutes, until a paste forms.
4-Add the remaining ingredients and continue processing until a smooth dough forms.
5-Mix in the chocolate chips.
6-Scoop dough onto a baking sheet lined with parchment paper or a silicone baking mat. Place another sheet of parchment paper over top, then gently press down to form discs. Remove the top sheet of paper and bake the cookies for 15 minutes.
7-Remove from the oven and let them cool completely.
