
Avocado Chocolate Cake

from Living Healthy With Chocolate
1½ avocados
3 tablespoons melted coconut oil (always make sure it is virgin and unrefined)
2½ tablespoons full fat coconut milk (leave the full fat coconut milk in the fridge overnight and the cream will form on top)
1 teaspoon vanilla extract
3 tablespoons raw honey
2 eggs
½ cup pecans (chopped)
2 cups almond flour
1 teaspoon baking soda
¼ cup raw cacao powder (I love the Navitas Naturals)
½ teaspoon salt
⅓ cup chocolate chips (semi-sweet)
1-Place the avocados in a food processor or Vitamix and blend until creamy.
2-Add the coconut oil, coconut milk, vanilla extract, raw honey and eggs to the avocado and blend until combined.
3-Mix the chopped pecans, almond flour, baking soda, cacao powder, salt and chocolate chips in a large bowl.
4-Combine wet and dry ingredients and mix gently. Do not over mix.
5-Spoon batter into a medium loaf pan and sprinkle top with chocolate chips.
6-.Preheat oven at 350°F and bake until a toothpick inserted into the center of the loaf comes out clean, approximately 40 minutes.
7-Let it cool and enjoy!
