Baked Potato Roses

3-4 medium size organic potatoes

Olive oil 

garlic powder

himalayan sea salt

fresh rosemary (minced)

 

1-Preheat oven to 400°F.
2-Wash and peel potatoes. Keep them in a bowl of water so they don't get dark.
3-Slice your potatoes using your mandolin slicer.
4-In a small bowl mix olive oil, garlic powder, sea salt, minced fresh rosemaries. You can prepare this with any herb and seasoning as you like. I also did one with ketchup, salt and olive oil.
5-With your sliced potatoes, make a row of partially overlapping slices. About 10-12 slices per row.
6-Brush your seasoning over your row of potato slices.
7-Roll them starting from the first slice forming a rose. 
8-Set these roses in mini muffin cups and bake until crisp and golden.
9-Enjoy!
