Banana Oat Pancakes
2 bananas (mashed)
1/4 cup coconut flour
3/4 cup oat flour
1 cup unsweetened coconut or almond milk
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 cup semisweet chocolate chips
1-Combine all the ingredients in a bowl and mix well. If batter becomes too thick to pour easily, add a tablespoon or two of milk to thin.
2-Heat a skillet over medium heat and coat it lightly with coconut oil.
3-Drop 1/4 cup of batter onto the hot skillet. Sprinkle a few chocolate chips and let the pancake cook for about 2 minutes, until bubbles begin to form on the top of the pancake.
4-Using a spatula, flip and cook about minute or so, until golden brown on both sides
5-Repeat with remaining batter, making sure to clean and coat your skillet again with oil between each batch.
Makes about 8 pancakes.
