3 cups almond flour

1/2 cup coconut sugar

2 teaspoons baking soda

1 teaspoon cinnamon

1/8 teaspoon sea salt

3 eggs

1 cup grated carrots

4 tablespoons coconut oil (melted)

1 teaspoon vanilla extract

1/2 cup semisweet chocolate chips

1/2 cup raw walnuts or pecans (chopped)

 

1-Preheat the oven to 350ºF (180ºC).

2-Mix almond flour, coconut sugar, baking soda, cinnamon and sea salt in a bowl.

3-In a seperate bowl, whisk together the eggs, grated carrots, coconut oil and vanilla extract.

4-Add dry ingredients to wet and continue mixing.Stir in chocolate chips and chopped walnuts/pecans. Be careful not to over mix.

5-Grease your 8 inch round cake pan or bread pan with coconut oil.

6-Pour in batter and bake about 30 minutes, until a toothpick comes out clean.

7-Let the cake cool before removing it from the pan.
