Carrot Ginger Soup

2 tablespoons of Extra Virgin Olive Oil

1 small onion (chopped)

4 cups of peeled and chopped carrots (4 large carrots)

2 tablespoons of peeled and chopped fresh ginger

1 teaspoon Himalayan Sea Salt

1/4 cup fresh orange juice

6 cups of Vegetable Broth

 

1-In a medium pot, saute the chopped onions with olive oil.

2-Add the carrots, ginger, salt, orange juice and vegetable broth and bring the mixture to a boil. Reduce the heat and simmer for another 20 minutes until carrots are tender.

3-Puree your soup in Vitamix or any other blender until creamy and smooth.

4-Enjoy!
