1 cup full fat coconut milk (Chill a can of coconut milk, then scoop out the coconut fat that separates out and solidifies, leaving the watery liquid behind)
1/4 cup raw cacao powder
1 teaspoon vanilla extract
1/8 teaspoon sea salt
4 oz dark chocolate (I use Endangered Species dark choclate 72% cocoa)
1-Melt the dark chocolate using a double boiler.
2-Place the melted chocolate, coconut milk, avocado, cacao powder, vanilla extract and sea salt in Vitamix or food processor. Blend until smooth and creamy,
3-Pour mixture into small bowls and chill until ready to serve. Top with fresh raspberries.
