1/2 cup canned pumpkin 

2 tablespoons raw honey

1 egg

2 tablespoons coconut sugar

1/2 teaspoon cinnamon

1/4 teaspoon pumpkin pie spice

1 teaspoon baking soda

1 cup oat flour (Use Organic Rolled Oats not the quick/instant oats. Place the oats in your vitamix or food processor and pulse until the oats are ground into a powder-like consistency. Measure after blending the oats)

1/2 cup semi-sweet chocolate chips

 

1- In a bowl, mix together the pumpkin puree, honey, egg and coconut sugar with a hand mixer.

2-In a seperatw bowl, blend all the dry ingredients.

3-Combine the dry and wet mix.

4-Stir in chocolate chips.

5-Chill dough in the fridge for at least 30 min. The dough is quite sticky, so chilling is mandatory.

6-Cover your baking sheet with parchment paper. Roll cookies in dough balls and place on cookie sheet 2 inches apart.

7-Cook about 10 minutes until edges are nicely browned.

8-Remove from the oven and let them cool completely.

9-Enjoy!
