Chocolate Covered Chestnuts
15 oz roasted chestnuts
1/2 cup water
6 oz dark chocolate
1 tablespoon coconut sugar
Finely grounded raw pistachio for garnish
1-Boil the roasted chestnuts in water with 1 tablespoon of coconut sugar for about 10 minutes until very little water left in the saucepan.
2-Blend your boiled chestnuts in food processor until you have a dough-like puree.
3-Form the chestnut puree into balls in the size of chestnuts.
4-Melt 6oz dark chocolate in a double boiler.
5-Roll your chestnut balls in the melted chocolate to cover all sides with the help of a small spoon, letting any excess chocolate fall back into the bowl.
6-Place each ball on a baking tray covered with wax paper. Garnish the top of each ball with ground pistachios.
7-Place the tray in the refrigerator for at least 20 minutes before serving to allow the chocolate to set.
8-Store in refrigerator.
