2 cups quinoa flour

1 teaspoon baking soda

1/4 teaspoon salt

2/3 cup coconut oil, melted

1 cup coconut sugar

1 egg

1 teaspoon vanilla extract

1 cup chocolate chips

 

1-Preheat the oven to 350ºF (180ºC).

2-In a bowl whisk together quinoa flour, baking soda, and salt; set aside.

3-In a separate bowl whisk melted coconut oil and brown sugar until smooth. Add in egg and vanilla extract and beat again until creamy.

4-Add dry ingredients to wet and continue mixing. Stir in chocolate chips

5-Chill dough in the fridge for at least 10 min.

6-Cover your baking sheet with parchment paper. Roll cookies in dough balls and place on cookie sheet 2 inches apart.

7-Bake about 10 minutes until edges are nicely browned.

8-Remove from the oven and let them cool completely.

9-Enjoy!
