2 cups lima beans
1 cup cherry tomatoes
1/4 cup fresh mint leaves

2 tablespoons olive oil 

1 tablespoon fresh lemon juice

sea salt and pepper to season

 

1-Steam lima beans for about 8-10 minutes.

2-In a bowl, mix lima beans, cherry tomatoes and fresh mint leaves.

3-Toss with olive oil and fresh lemon juice. Season with salt and pepper to your taste.

4-Enjoy!
