Mediterranean Quinoa Salad

1 cup uncooked quinoa

1 cup halved cherry tomatoes

1 cup diced cucumber

1 cup feta cheese (crumbled)

1/2 cup sliced kalamata olives

1 tablespoon chopped fresh mint

1 tablespoon chopped parsley

1/4 cup roasted pinenuts

4 tablespoon lemon juice

2 tablespoon olive oil

sea salt 

 

1-Cook the quinoa according to the cooking instructions on the package. Let it cool.

2-In a large bowl, mix the quinoa, tomatoes, cucumber, feta cheese, black olives, mint, parsley and pinenuts together.

3-Add the lemon and olive oil and toss well. Season to taste with salt .

4-Enjoy!
