Oven Roasted Potatoes

Kale Chips

8-10 small red potatoes 

extra virgin olive oil

garlic salt 

fresh rosemary (minced)


1-Preheat oven to 400°F.

2-Cut the potatoes into approximately 1/4" sticks.Do not peel the skin! The skin of red potato is loaded with fiber and has a lower glycemic index than the skin of a white potato.

3-In a large bowl, combine all ingredients except potatoes. Toss potatoes in mixture, coating evenly.

4-Place on a baking sheet and bake about an hour, until potatoes are crispy, browned and tender
