Peanut Butter Oat Flour Bread

2 cups oat flour (Use Organic Rolled Oats not the quick/instant oats. Place the oats in your vitamix or food processor and pulse until the oats are ground into a powder-like consistency.)

1 cup organic crunchy peanut butter

1 tablespoon baking powder

1 teaspoon cinnamon

1/2 teaspoon sea salt

1 cup unsweetened coconut milk

1 egg

2 egg whites

1/3 cup coconut sugar

1 teaspoon vanilla extract

1/2 cup semisweet chocolate chips

 

1-Preheat the oven to 350ºF (180ºC).

2-In a bowl, whisk together with hand mixer the egg, egg whites, vanilla extract and coconut sugar. 

3-Add peanut butter and coconut milk. Continue mixing with hand mixer.

4-Add oat flour, sea salt, cinnamon and baking powder to the mixture and mix for about one minute until combined.

(You can buy the oat flour or like I do just put your rolled oats in your Vitamix and make your own oat flour)

5-Add the chocolate chips.

6-Grease your bread pan with coconut oil.

7-Pour in batter and bake about 40 minutes, until a toothpick comes out clean.

8-Let the cake cool before removing it from the pan.

9-Enjoy !
