
Peanut Butter Oat Muffins

1/2 cup mashed ripe banana (1 medium size banana)
1/2 cup creamy peanut butter
2 tablespoons coconut sugar
2 tablespoons honey
1 teaspoon vanilla extract
1 egg
1/4 teaspoon sea salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/3 cup oat flour (regular old fashioned oats that have been blended- measure after blending)
1/3 cup old fashioned rolled oats
1/3 cup semi sweet chocolate chips
1-Preheat the oven to 350ºF (180ºC) and line muffin pan with paper liners.
2-In a mixing bowl, using a hand mixer, blend together the mashed banana, peanut butter, coconut sugar, honey and vanilla extract.
3-Add the egg and blend again.
4-Add the sea salt, baking soda, baking powder, and oat flour and continue blending with your hand mixer.
5-Stir in the rolled oats and chocolate chips.
6-Pour batter evenly into the muffin cups using a cookie scoop. This recipe makes make about 8 muffins...Sprinkle a few chocolate chips on top.
7-Bake for about 15 minutes.
