
2 cups raw cashews (soaked in water at least 4 hours to overnight and rinsed)
1 lemon juice
1/4 cup coconut oil
1/2 cup full fat coconut milk (use the cream on top)
1/4 cup honey (or agave nectar if vegan)
1 teaspoon vanilla extract
1-Add all the ingredients to your Vitamix or food processor and mix until silky smooth.
2-Pour in small cups and place in fridge to set for an hour.
3-Decorate with your choice of fruits.
4-Enjoy!
