Amaranth, this tiny grain is actually not a grain but is the seed of the amaranth plant. 

Amaranth has a rich history dating back 8,000 years. The ancient Aztecs relied on amaranth not just as food but also used it in their religious rituals.That's why it's named “super grain of the Aztecs” and “golden grain of the gods".

 

Amaranth is a great addition to your diet. It is gluten-free and like buckwheat and quinoa, amaranth is a high-quality source of plant protein including two essential amino acids, lysine and methionine, which are generally low in grains. It's high in fiber and packed with iron, calcium and magnesium.

 

Amaranth’s protein content is about 13 percent, or 26 grams per cup, which is much higher than for most other grains, so for anyone cutting down on meat, amaranth offers a great amount of near-complete protein.

 

According to researchers at the University of Guelph in Ontario, Canada amaranth is a rich dietary source of phytosterols, which have cholesterol-lowering properties.

 

According to Dr.Mercola, " One reason amaranth is emerging into the forefront among grains is because of its remarkable nutrition. 

 

So try to add it to your daily diet, even when just a little is included in a recipe, the benefit is worth it.
