half of a seedless small watermelon, chilled
1 cup crumbled feta cheese
1 cup pitted kalamata olives,halved (optional)
1/4 cup fresh mint leaves, chopped
1/4 cup fresh lemon juice
1/4 cup extra virgin olive oil
1/2 teaspoon himalayan sea salt
1-Cut the watermelon in 1/2 inch cubes.
2-Combine watermelon, feta cheese, black olives (optional) and chopped mint in a salad bowl.
3-Pour the lime juice and olive oil over the watermelon mixture and toss gently to coat
4-Add salt to taste.
5-Garnish mint leaves.
