Zucchini Noodles AKA Zoodles

4 large zucchinis

1 cup halved cherry tomatoes

1/2 cup toasted pinenuts

 

Pesto ingredients:

2 cups fresh basil

1 cup walnuts

2 garlic cloves

2/3 cup extra virgin olive oil

1 tablespoon fresh lemon juice

1/2 tespoon sea salt

 

1-Spiralize the zucchinis. If they are too long you may have to cut them into smaller strands.

2-Mix in Vitamix or food processor all pesto ingredients. Taste and add more lemon or salt according to your liking. 

3-Toss spiralized zucchinis with pesto sauce.

4-Toast pinenuts in a dry pan on top of the stove for about 30-40 seconds. Be careful they burn easily.

5-Add halved cherry tomatoes and toasted pine nuts on your zoodles.

6-Enjoy!
